Breakfast Chia Pudding

Welcome to the world of Chia!

 

As the weather starts to get warmer, I find myself wanting to trade in my typical hearty breakfast of eggs and toast (not going to lie—I’ve been off bagels for about 2 weeks now and It. Is. Hard.) for something a little more refreshing, energizing, and light. Enter the perfect (and super easy) way to start the day: breakfast chia. It can also double as a pretty awesome summer dessert or snack. (raw/ vegan). Enjoy! Instructions below.

INGREDIENTS:

1/3 cup of chia seeds

1 and 1/2 cups of vanilla almond milk

2 Tablespoons of organic raw honey, agave nectar, or organic maple syrup (your pick!)

A whole bunch of berries of your choice


INSTRUCTIONS:

Combine above ingredients in a glass jar or similar, put the lid on it and shake it good or mix it up, pop it in the fridge over night, and enjoy the next morning with your favorite fruit toppings. I love it with blueberries and raspberries.
