Never Get Sick Soup

 

Fall, in all its vibrancy, can also tend to make us a little vulnerable health-wise. The wind and changing temperatures may leave us feeling dried out and susceptible to cracking joints, colds, and sometimes a seasonal flu. Here’s a solution: Never Get Sick Soup.

I took a page from Strala Yoga founder and super nice human, Tara Stiles' Make Your Own Rules Cookbook, (pre-order her new cookbook here) and tested this super-simple soup chalk full of healthy, healing, and warming ingredients to help ward off any seasonal sickness.

Ingredients

1 bell pepper (I used a combination of orange and yellow.)

2 handfuls spinach

½ onion (I used a red onion.)

1 teaspoon masala

1 teaspoon dijon

1 cup coconut milk

4 cups water (You can also sub out with vegetable broth.)

olive oil

hot sauce (I added a lot to spice it up.)

rice noodles (Be careful with these, they may stick to your pans for the rest of their lives.)

Make It Happen

Simmer onions in medium sauce pan for a few minutes

Chop and add bell pepper & spinach

Simmer for a few minutes

Add 4 cups water

Bring to a boil

Reduce heat and add spices and Dijon (I added a bit of turmeric & curry powder)

Simmer for 20 minutes

Add coconut milk

Simmer for 5 minutes

Prepare rice noodles

Add rice noodles to soup

Squeeze lemon
